Kitchen Trick: Whipped Cream that Lasts
Whipped cream is the perfect topping for many desserts. But timing is the problem. If you’re having dinner guests, you can’t really make it in advance. Or if you’re bringing dessert, you have to plan for equipment. And on a warm day, whipped cream droops.
Trick: whipped cream stabilizer. It’s a powder that you add while beating the cream, and it keeps whipped cream in shape for days in the fridge, and stays stiff on a warm day.
Leftover pumpkin pie or apple crisp now has terrific whipped cream!
How do you get whipped cream stabilizer? You can buy a packet from King Arthur Flour, or make your own.
A common ingredient is gelatin, which adds body without changing the flavor.
Also, use heavy cream rather than whipping cream for a higher fat content that whips better.
